Mohamad Fakih is a renowned entrepreneur and philanthropist with extensive experience in restaurant management, corporate finance, real estate, and executive leadership. As the owner of Paramount Fine Foods, Via Allegro, Di Mario’s, Paramount Fine Food Centre, and Armour Shield Roofing, he transformed Paramount Fine Foods into Canada’s leading Middle Eastern halal restaurant chain since 2006, expanding his empire globally.
 

His visionary leadership has earned him numerous accolades, including the Order of Canada, Canadian CEO of the Year, and the Top 25 Canadian Immigrant Award. He has also received the Key to the City of Mississauga and an honorary doctorate from Toronto Metropolitan University. Fakih continues to drive innovation and community growth across the business landscape.

His expertise in concept development, team building, and strategic growth has played a pivotal role in shaping high-performing hospitality brands worldwide. Dedicated to innovation and operational excellence, Ali continues to drive success and elevate industry standards.

With over 20 years of international hospitality experience, Mo Sabeh oversees operations across Evolv Group. His career began at the InterContinental Phoenicia in Beirut and progressed through leadership roles with Roberto Cavalli Caffè and multi-unit management at Paramount Fine Foods.

A strategic and detail-driven operator, Mo is known for managing multi-location operations seamlessly, controlling financial performance, driving revenue growth, and elevating restaurant concepts. He is committed to strengthening teams and ensuring every Evolv Group venue delivers an exceptional guest experience. Mo holds a degree in Hospitality Management.
 

Fouad Daher is an accomplished hospitality leader with a strong track record in multi-location restaurant operations. With extensive experience in operations management, team leadership, strategic planning, budgeting, and guest satisfaction, he has consistently driven performance improvements and revenue growth across diverse restaurant environments.
Known for fostering a culture of service excellence, Fouad excels in developing high-performing teams and optimizing operational efficiency. He holds a Bachelor of Business Administration in Hospitality Administration/Management from the American University of Science and Technology.

Claudio Aprile is one of Canada’s most celebrated and visionary chefs. Born in Uruguay and raised in Toronto, he built his career across top international kitchens before becoming a highly successful restaurateur. His early acclaim came in London as Executive Chef at Bali Sugar, earning both local and global praise.

Returning to Toronto in 2000, Aprile solidified his reputation at Senses, then achieved international recognition with his first restaurant, Colborne Lane—considered one of the best in the world and praised for its innovative cuisine. In 2010, he launched Origin, an open-kitchen concept that Toronto Life and NOW Magazine named the city’s #1 restaurant.

Aprile later consulted on Liberty Group’s Xango, blending Asian and Latin American influences to strong critical reception. Today, he serves as Culinary Director for a boutique restaurant group, overseeing multiple kitchens including Via Allegro and DiMario’s, with a new concept set to open in spring 2026.

Beyond his restaurants, Aprile is widely known as a judge on CTV’s MasterChef Canada since 2014, one of the country’s top-rated culinary programs.
